Wow your friends with this Raw Carrot Cake Balls Recipe

A delicious recipe that is a winner at Hoys Heath on the Coffs Coast.

Makes 12

Ingredients:

  • 4 medjool dates (approx. 60g pitted)
  • 50g almonds
  • 25g rolled oats
  • 1 medium carrot, grated
  • 2 tbsp flaxseed, milled
  • 1.5tsp ground cinnamon
  • 1tsp vanilla extract
  • 15g coconut desiccated
  • ½ - 1tsp grated fresh ginger if you like zing
  • Coating: Desiccated coconut (optional)

Method:

  1. Place all ingredients into your food processor and blitz until everything is blended.
  2. Form 12 balls with blended mixture.
  3. Roll balls into desiccated coconut.
  4. Pop in the fridge to firm up for at least 2hours. Enjoy.
